Why does my friend insist on this?

i do that! hehe! just tell her that it's annoying. the next time she corrects you in IM say you've got to go and sign off immediately, before she even says bye. if you're talking and she corrects you don't acknowledge it and start doing something else or talking about a totally different subject.she'll get the picture.
